Ok feather , here are the results....2-1/2 days of canning yielded 113 jars on the shelf. Today I need to "recover" the house, lol....and turn my eyes to T-Day Almost 10 cases of canned meat and meat products. I also bow down to you.

midtnmama, feather, Nothing to bow down to....I do it out of desperation, lol. Not enough freezer space and a hubby that would NOT do well if his "food habit" was altered. Honestly, I think he'd be fine, eventually. But in some things, his "Normalcy bias" is crazy strong.....and food is one of them So being well-stocked in shelf-stable meat is so he can adjust on "his time" to any hiccups. Not to mention buying beef by the side is much cheaper.....which is my "normalcy bias". I won't spend the price grocery stores want.

A minor change of plans. Just caught 2 hawks in my meat bird pen. They killed 3 of our 12 birds. So I have them all locked up in the coop now. If hubby isn't working this Friday....I think we better harvest them...

Yes, I saw the one, but was very surprised when I jumped a second. My meat babies have seen the sky for the last time. But they enjoyed the great outside longer than grocery store birds.
There is a BIG oak tree in that run....this is the first time we had birds in there when there weren't leaves on the tree. The leaves just dropped in the last week.

Cody and windy at the moment here. I hope the wind dies down when the sun comes up. Butchering our meat chickens is the plan of the day. I hate this day! I feel sorry for them while we are doing it. I'm good once done, but...I feel their stress. But then they have been stuck inside a tiny coop for 3 days now....there is stress in that, too. Poor little creatures. I should edit that...Poor little delicious creatures. So canning part 2 begins either this afternoon or tomorrow...

Change of plans. TOO cold to butcher. We are instead going to try to create a roof for them. Then the end of this week is will be warmer....we can butcher then. They tried escaping toady when I fed them....they are done with being cooped up.

Ohio Dreamer, I don't know how large the outside area you want to protect the chickens. You don't have to build a roof for the birds--just run rope across and crossways across the area. Birds won't divebomb into an area like that. Add some prunings on top if you have any. Much easier than building a roof in the cold.

I used bird netting (the type to keep birds out of your fruit trees) over the top of my chicken run.

We didn't cover the way I wanted to....with netting like our layer's run is. Instead, a tent was made that was still open so they could get out. It worked for a few days but found 2 dead this morning in the coop. It looked like predator damage, but how in a closed-up coop. I figured I wasn't seeing it well....I wasn't looking as I grabbed and toss them in a trash bag. Figured it out later. I went and checked on them and found a hawk IN the coop...the girl he was attacking was still alive...just a few punctures. Texted Dh....he was in having lunch from hunting. He came home and we butchered the remaining 7. It wasn't planned....so they ate today. I washed them good, but they did "leak" in the dip water. So we are going to can them all just to be sure. Dh had to come home tomorrow for a night dinner meeting for work. He thought we could go see the Ghostbusters moving in the afternoon. Now that he's home we can have a slower morning then movie He'll go back to hunting camp after dinner.

Ohio Dreamer, The birds were butchered today. Then, do you just keep them cold until canning them? What do you do with them and for how long before canning?

I put 2 birds in a 2-1/2 gallon bag and tossed them in the fridge. So 4 bags in the fridge. Luckily my fridge was about empty, lol. Hubby and I had plans today, so they had to wait. Normally I would have started them this morning. I have 2 boiling in my big stockpot now. I'll strip the meat off then run it through our meat grinder along with celery, onions, and carrots. Add in some seasoning and can....will be chicken salad when opened (adding mayo and such when opened). Picked up some 1/4 pint jars to can it in....serving size

First load is in the canner. That load is Chicken Sandwich Spread. Open a jar, add mayo, relish, eggs, etc and good to go. Mostly in 1/4 pint jars....enough for 2. But a few half pint jars, too, as I want a few 1/4 pints for the next load. Bird 3 is sitting on the counter cooling after her long "bath" in the stock pot, lol. Birds 4 &5 just got in the "bath". By the time I get the 7th bird done, I should have a wonderful pot of stock to can. Then all the bones will get baked and more stock.... The rest of bird #2 and bird #3 will be BBQ Chicken. Then we can open jars for topping our salads ...or make sandwiches...or anything else. DH is back in the woods this morning. No text, so he hasn't gotten any, yet. He saw nothing on Tuesday, which is good. Allowed him to feel free to come home and process birds before we lost any more. We started with 13. Lost one to brooder pneumonia and 5 to hawks.

Ohio Dreamer, Wondering where I would find the "chicken sandwich spread" canning recipe? I still buy the "deviled chicken spread" and love it but IT IS SO EXPENSIVE! I have a ton of delicious cooked white meat turkey I could use. TIA

TIA Ask and Ye shall receive: CHICKEN SPREAD FOR SANDWICHES 8 lb cut-up chicken 1 bunch celery 2 onions 1 carrot 4 peppercorns 1 bay leaf Salt ΒΌ c. mustard 1 T. grated onion 1 T. vinegar Pepper to taste Combine the chicken, water to cover, celery, onions, carrot, peppercorns, bay leaf and 2 teaspoons salt in a large kettle and bring to a boil. Cover and reduce heat, then simmer for about 2 hours or until the chicken is tender. Remove the vegetables, then cool and chill the chicken and broth. Skim off the fat, then reserve 1 cup broth. Remove and discard the skin and bones from the chicken, then grind the meat. (I use my food processor) Cmbine the ground chicken, reserved broth and remaining ingredients. Pack into hot half-pint jars, leaving 1 inch head space. Place the caps on the jars. Process for 1 hour at 10 pounds pressure. To serve: add mayo, pickles, egg, whatever and spread on sandwich bread for a great lunch!

feather, Thank you so much for the recipe. 1 question: when you said "combine ground chicken, reserved broth and remaining ingredients" did you mean add back in the cooked veggies? Or just the 1Tgrated onion, 1T vinegar? Also, do I worry about about "chicken density" or just pack loosely?
