No plans. Just jumping on opportunities. Saw an onion sale, so bought 10 bags today. Cutting them to dehydrate. Onion prices were nuts this past year, so I at least have dry for 2023.

We hung ours in the basement, using twine, about 2 feet from the rafters. They got in the way of everything, and we were walking under them all the time. This year we hung them right up at the rafters so they are out of the way. Then, we keep an eye on them and if they start to sprout, we cut and freeze them, but cutting and dehydrating is a better idea. I've been depending on our freezer too much. I hope you get some help cutting them up! That's a lot of crying to do all by yourself.

feather, Yep hubby jumped in and helped cut them up. Lots of tears were shed, LOL. Walked into a deal of 3 giant yams for $1 today. Bought 9 ($3 worth). Will bake, freeze dry, then powder for DD's baby bump. Should be more then enough sweet potatoes baby food for her bump....and likely any future bumps after, lol.

That is so nice your hubby crying with you.
Last year's squash haul (over 100 lbs), I cooked, took it off the peel, smushed it onto parchment and dried. This is what I use for pumpkin pie. I added the chunks/chips of squash to the blender, about 1 cup, then added water to the 3 cup mark, then blended for 1-3 minutes and it thickens right up to a nice puree. Powdering to puree would be much easier. Congratulations on the baby bump too!
I should take a picture of the chunks/chips...so it's easier to imagine.

I've canned squash, never thought to dry it for pies... Drying it would take less space. Didn't get pumpkins or squash this year (thank you squash bugs). Will try it next year!

I should mention, the pumpkin in pumpkin cans is actually squash. Butternut, sugar pumpkin, and hubbard. Mine were butternut.
