I'm making three batches of whole wheat bread today. 6 loaves. 2 for DS, whole wheat and oats 2 for mr feather, whole wheat. 2 for me, whole wheat with cocoa powder added.
I proof them in the microwave/convection oven, it gets nice and warm and speeds up the process.
My tweaked recipe is to start with 1 T. active dry yeast, 4 cups of water around 100 deg F, 4 cups whole wheat flour. Once I'm sure it is active yeast, I add 2 to 3 T of gluten, and enough flour (oats, cocoa) to make it a nice dough, which is about another 4 cups of flour. I run the kitchen aid mixer for about a half hour on each batch.
I put the loaves in parchment lined loaf pans. Bake at 350 deg F for 35 minutes. I cool them, then slice them. Mr feather almost always makes an entrance to steal the end of the loaf slice.

Sweetie made a batch of sourdough bread the other day. Been 4 mos since we had bread. She made 6 cinnamon rolls and 13 dinner rolls. We had bacon, lettuce and tomato sandwich on one and another day had tuna sandwiches. Yesterday we had bacon burgers on one. We just are not eating much bread anymore. Sweetie uses the bread machine to mix, than hand forms and bakes in the oven. ...James

jwal10, I really enjoy sourdough bread, the flavor. mogal sent me some sourdough starter she made (dried) and I kept it going for a long time this winter. Now it is in the fridge, she calls this benign neglect, and I should be able to revive it again. Your sweetie sounds like a keeper.

Feather, it wouldn't hurt to "feed" it a little flour and water that you've allowed the chlorine to outgas for a few hours, just to be on the safe side.
Did I send you 1 or 2 packets of the dry starter?
Actually, that original starter came from a very generous man at the Columbia Heritage Festival who was demonstrating baking bread using yeast. We started chatting about sourdough and he said he had his starter with him. He found a cup and sent me home with some, asking that I share it with others. This was I guess 8-10 years ago. I know he'd be pleased to know about the dry starter not to mention all the wet starters I've passed along to friends.

Okay I will feed it, mogal, I'm such a bad sourdough starter momma. You sent me 3 packets, I've used one. I set the sourdough starter out on the stove, to warm up. I'll feed it and hope it likes that.

And anything she makes with sour dough.. Seeing as sour dough is a living, growing thing, we call our jar of starter Fred...

Seeing as sour dough is a living, growing thing, we call our jar of starter Fred... Tim, karenbc, I use whole wheat flour, and whole wheat pastry flour, yeast, gluten, sometimes a few tablespoons of honey and a dash of salt, water to make bread. What goes into National Loaf?

mogal, I did feed my sourdough starter, it was out for a few hours, then fed, then let sit a while, then put into the refrigerator. I may have to go back to making hamburger bun shaped bread, where you get some crust on the top and bottom and everyone gets crust.

I took a pause to bread making when I couldn't get enough flour, but I can do it again now. I think I'll break out the honey wheat recipe again.
