I came across this website - that has so many good sounding recipes for using up eggs. Since there are more eggs in the fridge than anything else I thought I'd give the Breading Pudding recipe a go: ohmyveggies.com/chocolate-bread-pudding/I switched it back to raisins instead of chocolate chips. And used 2 pints of home canned 1/2 & 1/2 cream. The cream came out of the jars just as nice as it went in. Bit of rebel or outlaw canning that. Fun to go downstairs to the basement "store" to shop for the cream. Hoping it turns out good, with a cuppa tea on this rainy evening.

YES....YES... The bread pudding came out well.... take my word...
But then it is one of both our favorites.. I remember as a kid, my Irish Granny would make up a quick version for the oven as a chicken or the like was baking..
Looking forward to what else she comes up with from this collection..

karenbc, Tim Horton, I don't eat eggs anymore but I did love eggs. One of my favorite things a frittata, cook up and begin to brown potatoes and onions, any other veg, then put the eggs over that in the frying pan or baking tray, and it is like a savory pie. A cream or milk based custard with eggs, topped with sugar browned with a propane torch. A coddled egg. The eggs go in the porcelain coddler, a pinch of salt, maybe pepper, dash of cream. Coddlers come in different sizes to do just one egg or the bigger ones fit two eggs. That goes in boiling water, and at 7 and 1/2 minutes or 8 minutes, it's nearly perfect. Like a soft boiled egg but even more gentle. So gentle the white doesn't get rubbery and the yolk is hot but not solid. With toast. Mr feather did a short stint as a cook when he was young and he could make the best fried over easy eggs, better than I could do. They were just perfect, not over cooked, hot yolk and tender whites.

Growing up, Mom made toast in the wood stove oven on a baking sheet. We didn't have a toaster. Dad ate a lot of bread and milk and he liked left over toast for that. Mom very seldom had leftover toast to make bread pudding so would make an extra pan so she had some. She really liked bread pudding. Me, not so much. Hers was just old toast, milk, eggs, raisins, vanilla and honey. She always buttered the toast when it as hot from the oven, so there was that.
My favorite way to use a lot of eggs is custard. Next is pickled eggs. I boil a dozen eggs a week, usually, 6 at a time these days. eat 1 hot, 1 cold later and 4 to pickle. I rotate 4 jars of pickled eggs so they have time to pickle. I use pickled eggs in potato salad, a little extra flavor....James

I also use pickled eggs in potato salad, the zip is nice. That might be a good plan for tomorrow James...the eggs are taking over the fridge...again.

How about scotch eggs or welch eggs. One is based with sausage or lamb, ground/minced, formed around the hardboiled egg (as barely hard boiled as possible), then it is rolled in bread crumbs, then baked or fried. These can be seasoned with all kinds of herbs or spices. They can be eaten hot or cold. The second kind we've made was with mashed potatoes, (w/cheese/raw egg/gr onion) formed around a hard boiled egg, rolled in bread crumbs, baked or fried. My kids liked them and they were a treat. I need eggs well cooked how ever they are made. I also like deviled eggs, the kids always ask for them. I use sweet pickle juice in them....James

I made Scotch eggs last week! Mine were quite a bit bigger than the picture.
Last night made Brioch buns - first time for that. Southern Custard Pie - also first time. 5 eggs, that makes it breakfast food - right?? Potato Salad done for today.

Wowza, that's some ingredient list! Isn't it!?! Crazy amounts, big. I asked my son's roommate if he would quarter the recipe and use his frozen fruit cake mix that he likes, to see if he likes that recipe. I haven't heard back, lol. He likes the cake part of fruitcake when he makes it at Christmas, so maybe it would fit the bill.
